Tried to find the answer to this question and all the info I can find is dated. This OS is out, right? Are there any large-format tablets (~10") that run it?

Can Honeycomb tablets be upgraded to the new OS?

This is essentially covered by When will my device get the Android 4.0 update (Ice Cream Sandwich)? I would think, and trying to maintain two lists which will quickly become out of date (especially this phrasing since "today" is a moving target) seems kind of unnecessary. –  eldarerathis Mar 8 '12 at 22:57

Most Honeycomb tablets should get ICS officially (unless the manufacturer has already moved on), or unofficially (CM9). Not an Exhaustive list, but the ones I know of are running today:
