Hi and welcome to Android Enthusiasts. Please don't post multiple questions within the same post. You are able to edit your question and post another one for your second question. Please also choose a good title for your questions. – Flow Aug 17 '12 at 11:01
As there are multiple Hotmail apps around, it would help if you could provide addittional information (e.g. a link). So I just can guess the first problem described is caused by using POP3 instead of IMAP -- does it say anything about this in its config? If it uses POP3, all mails are just stored on the client (here: your Android App, so you cannot see mail sent from this on your PC). IMAP would store everything on the server, so you should be able to see. – Izzy Aug 17 '12 at 11:01

It's difficult to tell what is being asked here. This question is ambiguous, vague, incomplete, overly broad, or rhetorical and cannot be reasonably answered in its current form. For help clarifying this question so that it can be reopened, see the FAQ.

You will have the option to store more messages after you have setup the hotmail account.

You can find this in Settings of the email app, then you must enable server sync on the server side and which folders needs to be synced.

This can also be done through the application settings. Try deleting your account and configuring it using POP3 since by default hotmail.com uses POP3 for mail configuration.
