I thought that the technology for Folders on Hotmail was proprietary and not IMAP. Hence, only the official App could access folder. But how is this default client able to access folders?

Nobody can tell you unless it is known what "this default client" is. The default mail client varies with different devices: e.g. HTC uses a different one (Sense) than Motorola (Blur) or Samsung (TouchWiz), as almost every producer customizes a lot of stuff. – Izzy Dec 27 '12 at 10:28
