When following instructions for rooting a specific S3 model (ATT SGH-I747), does it make a difference whether any OTA updates were applied?

Also, is there any real likelihood of a future OTA update causing such a rooting process to brick the phone?

It probably depends on the rooting method. Some used exploits in the Android system which were patched in later versions, so they won't work at all. Others don't rely on exploits. For Samsung phones it usually doesn't matter because the bootloaders are usually unlocked (so you can reflash them pretty freely). – eldarerathis Oct 24 '12 at 23:45
