You need root to do something like that, sorry to say. Rooting is probably less intrusive than screwing with system services, though. There is this tool called RSD Lite, which is (AFAIK) an internal tool from motorola to flash their phones. You should be able to find it around the googles. And here you should be able to pick up a stock firmware for the Defy. This method worked for my Moto Cliq XT, but don't let this be a guarantee for your Defy!

Yes, that's an accurate observation. I don't have a Motorola phone myself, but from what I understand Blur is embedded pretty tightly into the ROM. Trying to remove it would be painful at best, and probably just cause your phone to start crashing. While I don't know how to kill MotoBlur, if you are rooted you can use Titanium Backup to remove the crappy system apps that run all the time. Just open Titanium, click the offending app, and click Uninstall. Only remove apps that aren't needed for the system to run, of course.
