Depending on the tablet, you can look around on XDA Developers to see if a "custom rom" exists for your device. That's the only real way you can "force update" a device, since many manufacturers don't release many updates and you can't force a system to find something that doesn't exist. That said - voting to migrate since this is more an Android question than an SU one.

Not that is easy, as far as I am aware. Many times you can tear apart an APK to see the manifest, but that's a bit more involved.

If you use GMail and add contacts there, there is nothing you directly need to do outside of signing into that same account on the other android (and perhaps checking to sync contacts).

Just to check the main things: 1) Are you on the same WiFi network with the Android phone? (if not, do you have port forwarding on your router forwarding to your mac & using the public IP?) 2) Can you ping from android to the mac you are trying to reach?

Building on @Izzy 's statement, that isn't frequent enough to be a deal-breaker as far as I am concerned (although inconvenient). It is slightly inconvenient, but it does allow for everything to be clean for the new release since JB focused on being smooth. Another option would be to root and use Titanium Backup to backup apps+data.
