Can I replace the OS inof a Samsung Galaxy S?

I was attracted by the hardware specificationspecifications of the Samsung Galaxy S.

However, I don't like the default TouchWiz skin developed by Samsung. II'd prefer to use Nativethe native Android UI, as in the Nexus S and similar devices.

Is it possible for me to perform "self installation" of originalthe stock Android OS, after I bought the Samsung Galaxy S.? If yes, how? Will I void the warranty of my smart phone by doing this?

Question definitely isn't specific to the Nexus S, so pulling that tag. Does seem to be about operating systems, touchwiz and rooting so adding those tags.
