I don't want my app data usage to be seen by anyone else using my device. Why is it stored on the device to begin with? How can I hide or delete it? It's the bandwidth usage that I want to either delete or hide.

I don't want my app data usage to be seen by anyone else using my device. -- Android is not designed to allow multi-users to use a single user profile. It does allow multi profiles setup though to accomodate multi-users' needs. What this means is that the way you use your Android by allowing more than one person to access a single user profile is not something Android expects. So it doesn't hide sensitive user profile details because it expects that there is going to be one and only one user per profile accessing those details.

You can create a secondary user profile for other users of your device. Otherwise, you would want to create some sort of hack to hide details that you want to hide. As for deleting app data usage search Settings app for that or the App settings page for your app. If you don't get to see such feature then uninstallation of the app would purge data usage information for your app.
